The term “specialty coffee” was first coined in 1974 by Erna Knutsen to describe coffee beans grown in unique microclimates, yielding flavors of exceptional quality. Today, specialty coffee is defined by a coffee scoring 80 points or higher on a 100-point scale established by the Specialty Coffee Association (SCA). This rigorous scoring system evaluates every detail, from the absence of defects in the green beans to the distinctive aroma, flavor, and balance experienced in the cup.
To achieve the specialty grade, coffee must adhere to strict standards, including:
- Selective Hand-Picking: Only ripe cherries are harvested.
- Limited Defects: No more than five defects per 350g of green coffee.
- Sustainability: Increasingly, specialty coffee incorporates ethical practices, ensuring fair wages and sustainable farming methods.
